De la ma\u00eetrise de ce savoir-faire d\u00e9pend la <strong>qualit\u00e9 gustative des f\u00e8ves.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Que signifie Bean-to-Bar ?<\/h3>\n\n\n\n<p><strong>Le chocolat bean to bar signifie qu&rsquo;il est fabriqu\u00e9 directement \u00e0 partir des f\u00e8ves de cacao par l\u2019artisan.<\/strong> Lorsque les f\u00e8ves arrivent dans l&rsquo;atelier de MO Chocolate en Belgique, les artisans proc\u00e8dent eux-m\u00eames \u00e0 la torr\u00e9faction et au conchage. <\/p>\n\n\n\n<p>Cela permet de mieux r\u00e9v\u00e9ler les saveurs uniques de chaque origine de cacao. Le processus est souvent fait en petites quantit\u00e9s pour garantir la qualit\u00e9. Ce type de chocolat est artisanal, tra\u00e7able et souvent plus \u00e9thique.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">La torr\u00e9faction :<\/h3>\n\n\n\n<p>La torr\u00e9faction consiste \u00e0 <strong>chauffer<\/strong> <strong>les f\u00e8ves de cacao<\/strong> pour d\u00e9velopper leurs ar\u00f4mes. Elle r\u00e9duit l\u2019humidit\u00e9, facilite l\u2019\u00e9limination de la coque et intensifie les saveurs.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Le conchage :<\/h3>\n\n\n\n<p>Le conchage, lui, est un long malaxage de la p\u00e2te de cacao chauff\u00e9e.
